This 450L batch was our first coolship brew, and the only one from the 2021 brewing season. The hot wort was left to cool overnight in March 2021, and as it cools, naturally occurring yeasts in the air are able to inoculate the wort before being transferred the following morning to neutral oak barrels then left to age until ready - in this case, almost exactly 2 years! Zesty lemon and apples come through with a heady bit of funk and a classic dry finish.
