Now in its third iteration, Defunkt IPA is designed to be a bridge between the original historical IPAs, brewed strong, heavily hopped and barrel aged, and today’s new world hopped fruity numbers.
This “IPA” was brewed in December 2021, fermented with our house culture and hopped with UK grown Chinook hops. It was left to age for 24 months in barrel, and was then transferred to tank for 7 months for further ageing, then dry hopped with our own Bramling Cross hops from the 2023 harvest.
Far more funky than sour, the hop oils have faded into fresh grapefruit and bretty funk, and an earthy, spiced back note to the finish.
